Blech, Mondays. Blech.

Happily, it was gorgeous out yesterday after work.  Which meant that I couldn’t not take the dog for a walk.  So we did our regular hoof.  But if I take the dog for a walk it means that there is no gym time.  This is an ongoing problem.

Unhappily, I had to take half an allergy pill again last night to stop the itching and sneezing.  SO disappointed.  Stupid allergy pill also means that I have a super hard time waking up in the morning and feel drugged for half the day.

Dinner last night was delicious!

Quick "recipe". 2# ground pork About a cup of fresh chives or green onions About an inch and a half of fresh ginger, microplaned A shy quarter cup of Frank's Red Hot 1 smallish baked sweet potato 1 egg 1-2 tbsp coconut flour S, P, Garlic Powder Smoosh up, really SQUEEEZE the meat into a ball shape and then pat down into a patty.  Poke a divet in the middle and throw on the BBQ until cooked.  (I use a silicone BBQ mat so I usually have the bbq screaming hot and the mat grills and fries the burgers while preventing them from sticking.

Quick “recipe”.

Pork burgers, roasted garlicky potato wedges and coleslaw w/ homemade dressing. This whole meal is Whole30 approved with the exception of the bit of ketchup I had.

Burg Dinner

This dinner was SO good.  I had a burg and a half because I was starving….more than likely to do with my missed dinner the night before and my relatively small lunch.

My poor honey thinks he’s coming down with a cold so I threw a pot of bone broth on this morning so he’ll have it when he gets home.  My stash in the freezer is all lamb broth and he flat won’t drink that (I don’t like it either). So this morning was a bit rushed.  And while I was simultaneously putting on bone broth, making breakfast, feeding the dog, washing the dishes, getting dressed and opening all the blinds, somehow I managed to way over salt our morning veggie side dish.  One of my favourite “hacks” is to saute a bag of coleslaw with ginger, garlic, S&P as the veggie.  Unfortunately it came out SUPER salty, inedible, really.  😦

This afternoon I have to run home around lunch to meet the guy from the Harley dealership who is picking up Ray’s bike for inspection and, ultimately, trade in.  And since I will have just myself and my assistant left at the office when I get back, I’m bringing Gracie to work with me.  I’m hoping that she’ll be so exhausted from an afternoon at the office (totally outside of her comfort zone) that she’ll come home and crash after her dinner so that I can hit the gym!

I’m all alone this evening too, Ray is going for dinner with his mom and then doing some chores at her house so I’m going to make a batch of cauli rice and throw an egg at it.  Yay for no cooking mid week!

FOOD (Mon, Mar 16)
M1: mushroom & pepper stuffed omelette w/ back bacon, gingered snow peas
M2: dijon balsamic pork, butternut squash, asparagus, 1/2 avocado
M3: pork burger and a half, potato wedges, coleslaw, 1/4 avocado

EXERCISE (Mon, Mar 16)
3.5km walk w/ Gracie, 36 minutes

That’s it for me.  My entire technical crew is on their way to an out of town job that will keep them busy for 3 days….which means while they are gone, I don’t have a whole lot going on.  Happy St Patrick’s Day!!!!!!!!

  1. Your coleslaw hack saved my ass today. I didn’t get to make my lunch last night but really didn’t want to have to buy lunch today (even if I chose a salad, I didn’t want to spend the money). But I actually had a bag of good slaw in the fridge and sauteed it up and threw in a piece of leftover chicken thigh and some paleo mayo on the side! Bingo! Easy lunch! 🙂
