I just made and ate the best thing I’ve eaten in a long, long time. I debated whether or not I would make it tonight, I got home later in the day since I went to the gym after work and I wasn’t totally sold on cooking something. I am SO glad that I did though.

5-6 kale leaves chopped up looks like a lot for a one serving dish. It is a lot. But its the perfect amount. And kale stays very green when you cook it so it’s a beautiful dish from start to finish!
My only note regarding e recipe is that I probably only used 1/4 cup of feta instead of 1/3 and it was plenty, anymore and I think it would have been pretty salty. Also, I way over baked mine. The eggs looked watery for a really long time so I kept it in there for about 20 minutes instead of 12. That appearance of watery is evidentially what eggs look like when you bake them….the top stays shiny and weird. Don’t over bake! Had the eggs been runny, this delicious recipe would have been stratospheric!
I also forgot the second layer of sauce so I put it on when I ate it. Absolutely fantastic, light, flavorful, excellent texture. This will be a staple in my house!
